Healthy-ish Nut Butter Bites

This recipe is much more simple to make than it was coming up with a name that didn’t sound totally offensive lol. I wanted to indicate that you can use any type of nut butter for this recipe, as long as it’s creamy.

I came up with this as an alternative to eating something horrible after dinner to satisfy my sweet cravings. I’m not really a sweets person and prefer semi-sweet treats, so this dessert works perfectly. The combination of the dates with the oat flour will give these treats just enough sweetness. If you really want them extra sweet, add 1 tbsp. of maple syrup or honey.

These treats are quick and easy, and can be something you grab before leaving the house or after dinner. Have fun with these and put your own spin on them!

Healthy-ish Nut Butter Treats

Equipment

  • food processor

Ingredients

  • 4 medjool dates
  • 1/2 unsalted almond butter any creamy nut butter will do
  • 2-3 tbsp old fashioned oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup crushed hazelnuts any type of nuts will work here too
  • 1 tsp coconut oil

Instructions

  • Add oats to a food processor and pulse until fine.
  • Add dates and pulse until finely chopped and form a sticky ball.
  • Add almond butter and process until combined. Add more oats if mixture is too oily.
  • Scoop out dough by the tablespoon and roll into balls.
  • Place on a cookie sheet and stick in the freezer for a few minutes.
  • Combine chocolate chips with cocnut oil and melt mixture.
  • Remove balls from freezer and dip into the melted chocolate and roll until completely covered.
  • Roll the balls in the crushed hazelnuts until covered.
  • Store in fridge until ready to eat.
