- 1-2 large celery roots peeled and chopped
- 1/2 head cauliflower
- 1 potato peeled and chopped
- 1 tsp Ghee or olive oil
- 2 tsp vegan sour cream (optional)
- 1 tsp salt
- pepper to taste
Place the celery root, cauliflower, and potato into a steamer and steam until fork tender
Transfer to a food processor and pulse until smooth
